Most of, if not all or your kitchen items will still have the lingering smell for a significant time after the fire. When the affected area is not cleaned correctly it may become permanent. "Ozone machines" work by creating ozone (o3) via an electrical charge. Ozone is very unstable: o3 wanting to become o2. That third oxygen molecule is looking for something else to bond with. It bonds very well with the smoke, distorting the smoke molecule and neutralizing the smoke odor.
SERVPRO of Santa Rosa County will plug the ozone machine into the wall, set the timer (12-24 hours depending on the extent of the smoke damage) and let it do its thing in your home. After the timer is up you need to let the ozone break down completely into regular o2. (I recommend a full 24 hours). The house will smell a little weird, kinda bleach-like.
